
Babà
La ricetta di Antonella, quella vera: soffici, imbevuti di bagna al rum. Con queste dosi vengono 12-13 babà da stampini di 8 cm.
Ingredienti
- 300 g farina 00 W400 (o una buona manitoba)
- 300 g uova intere (circa 6 medie), tuorli e albumi separati
- 90 g burro morbido (non in pomata)
- 30 g zucchero
- 15 g lievito di birra fresco
- 6 g sale
- Per la bagna: 1 lt acqua, 500 g zucchero, la scorza di 1 limone e 1 arancia, una quindicina di cucchiai di rum scuro
- Per lucidare: 3 cucchiai di marmellata di albicocche + 2 cucchiai di bagna
Procedimento
- Nella ciotola dell'impastatrice mettete i soli albumi, rompeteli con una frusta senza montarli, unite pari peso di farina e avviate a bassa velocità con la foglia, giusto il tempo di formare l'impasto. Coprite.
- Dopo 20 minuti sbriciolate il lievito sulla massa, riavviate con la foglia, aggiungete uno spolvero di farina e lavorate a velocità media fino a prendere elasticità.
- Inserite i tuorli uno alla volta, con piccole parti di zucchero e spolveri di farina, a velocità sostenuta (circa 110 giri). Con l'ultimo tuorlo unite anche il sale.
- Con l'impasto ben in corda, inserite in tre volte il burro leggermente ammorbidito, a piccole dosi, ribaltando la massa a ogni porzione. Finito il burro, provate il velo.
- Montate il gancio e impastate pochi secondi finché la massa si stacca dalle pareti; ribaltate e ripetete, il tempo che si aggrappi al gancio. Sigillate e lasciate a temperatura ambiente finché non triplica il volume.
- Battete con la mano unta di burro e formate. Mettete le sfere negli stampini imburrati (anche il bordo!), coprite con pellicola e tenete al caldo, sui 28°.
- Quando la cupola supera di poco il bordo, infornate a 180° per circa 25 minuti: se sono coloriti sono pronti.
- Intanto preparate la bagna: bollite l'acqua con lo zucchero e le scorze, poi unite il rum. Immergete i babà freddi nello sciroppo tiepido: devono assorbire circa tre volte il loro peso. Strizzateli piano e metteteli in piedi, con la parte bombata in basso.
- Scaldate la marmellata di albicocche con due cucchiai di bagna, setacciate e pennellate i babà. Si gustano preferibilmente il giorno dopo.

Antonella's own recipe, the real thing: soft and soaked in rum syrup. These quantities make 12–13 babà in 8 cm moulds.
Ingredients
- 300 g strong flour, W400 (or a good Manitoba flour)
- 300 g whole eggs (about 6 medium), yolks and whites separated
- 90 g soft butter (not melted)
- 30 g sugar
- 15 g fresh brewer's yeast
- 6 g salt
- For the syrup: 1 litre water, 500 g sugar, the zest of 1 lemon and 1 orange, about fifteen tablespoons of dark rum
- To glaze: 3 tablespoons apricot jam + 2 tablespoons of the syrup
Method
- Put only the egg whites in the stand-mixer bowl and break them up with a whisk without beating them. Add the same weight of flour and run the mixer on low with the paddle, just long enough to bring the dough together. Cover.
- After 20 minutes crumble the yeast over the dough, start the paddle again, add a dusting of flour and work at medium speed until the dough becomes elastic.
- Add the yolks one at a time, with small amounts of sugar and dustings of flour, at a brisk speed (about 110 rpm). Add the salt with the last yolk.
- Once the dough is strong and smooth, add the slightly softened butter in three goes, a little at a time, folding the dough over after each addition. When all the butter is in, check the windowpane.
- Switch to the dough hook and knead for a few seconds until the dough comes away from the sides; fold it over and repeat until it clings to the hook. Seal and leave at room temperature until it has tripled in volume.
- Knock the dough back with a buttered hand and shape it. Put the balls into the buttered moulds (the rims too!), cover with cling film and keep somewhere warm, around 28 °C.
- When the dome rises just above the rim, bake at 180 °C for about 25 minutes: once they have colour, they are done.
- Meanwhile make the syrup: boil the water with the sugar and the zest, then add the rum. Dip the cooled babà in the warm syrup: they should soak up about three times their weight. Squeeze them gently and stand them upright, domed side down.
- Warm the apricot jam with two tablespoons of syrup, sieve it and brush it over the babà. They are best eaten the next day.
